Trade fair stand

A chef on your stand keeps visitors where your team wants them. We join the planning early, with your stand builder: power, walkways, refrigeration across several days, the space for the display counter. Two to three square metres are enough, and everything above the table edge we bring ourselves.

Corporate event

Summer party, client evening, anniversary. Small footprint, simple planning, one contact. One or two chefs at chilled display counters, with a warm station on request.

Private dinner

Wedding, milestone birthday, dinner at home. Your guests come to the counter and eat what is made in front of them. An evening built around your guests in quantity, menu and timing.

How an enquiry works

What we bring

The practical side

Space
Two to three square metres of work surface, and power. No kitchen needed. Everything above the table edge comes with us.
Stations
A sushi station with a chilled display counter that the portions are served from. Teppanyaki, gyoza and further stations can be added to spread the flow of guests.
Menu
Classic sushi from locally sourced and other premium ingredients, bought for your event. Nigiri, uramaki, chumaki, hosomaki; sashimi and warm dishes as an extension.
Quantities
As a snack about 6 pieces per guest. Alongside other food 10 to 12. As a main meal up to 20.
Set-up
Up to two hours before the start, less where possible. Where the schedule calls for it we set up the day before; in a trade fair week that is the rule.
Hygiene
An unbroken and documented cold chain, with deep-freezing on multi-day fairs. Allergens: fish, crustaceans, soy, and gluten in the soy sauce.

Why live

The contrast is what makes sushi

Sushi lives on contrast: hand-warm rice, fish from the chiller, crisp nori. Volatile aromas, textures that change within minutes. That is why every portion here is made when it is eaten.

We serve in a steady flow for as long as people are eating, put together to the guests' wishes or as small fixed menus.

Real wasabi is grated at the counter. Its aroma lasts minutes, which is why you only get it where somebody is grating.

Before you enquire

Do we need a kitchen?

No. Two to three square metres of work surface and power. Everything above the table edge we bring with us.

Do we have to provide refrigeration?

Not for a single-day event. Only on multi-day fairs do we need chilling overnight.

Vegetarian or vegan?

Yes. We plan about ten percent vegetarian by default so nobody goes without. Any other share on request, up to a fully vegetarian or vegan evening. Anyone who does not eat raw fish gets a seared or fried version.

How much sushi per guest?

As a snack about 6 pieces. Alongside other food 10 to 12. As a main meal up to 20.

What happens to the food that is left?

We pack it into take-away boxes or arrange it on your platters. Chilled from the end of the event it keeps for 24 hours.

Do you travel abroad?

Yes. We are based in Düsseldorf, home to the largest Japanese community in Germany, and we go where you are. Mostly within Europe, but no place is ruled out.
